When Your To-Do List Becomes a Saga and Your Fridge Becomes a Foe
Some days, I just want something delicious, filling, and fast — but it has to nourish both my body and my soul.
It was one of those days that stretched so far, it started to feel like a mini-series. You know the kind where the to-do list didn't shrink.
The fridge looked at me with contempt, and the idea of cooking felt like a betrayal of everything I stand for at this age (i.e., peace, shortcuts, and elevated laziness).
I was this close to eating peanut butter straight from the jar with a spoon (again), but then I spotted a pack of frozen cauliflower rice and remembered: I am a woman of resourcefulness, a sauté pan, and just enough energy to wield it.
The Ten-Minute Dinner That Resurrected My Sanity
I am a woman who can make dinner in ten minutes or less… and make it feel like a victory.
I grabbed “The Cast of Characters.”
A bag of frozen cauliflower rice
Half a leftover rotisserie chicken (I tore it up with my hands like a wild forest witch)
A big spoonful of pesto from the fridge
A handful of baby spinach
And a sprinkle of Parmesan because joy is important
Assembly Instructions (or: How I Cook Like I Text)
I threw the cauliflower rice in a pan with a splash of olive oil, added the chicken, stirred in the pesto, tossed in the spinach, and let it all sizzle together for, I don’t know, four whole minutes. Parmesan went on at the end like a crown.
Eat It By the Stove. You’ve Earned That Right.
Long ago, I started fueling myself with the right foods, and my energy levels got a boost, and I felt more grounded. So I ate it standing by the stove because I didn’t even want to pretend this was a formal affair.
Cozy, Cheesy, Green, and Slightly Feral
And you know what? It was really good. Cozy, savory, a little green, a little cheesy. It felt like something I would pay for at a café that spells “bowl” with no vowels.
I now keep all the ingredients on standby, because this? This is my go-to when I want to eat well but also rebel against the tyranny of multi-step recipes.
